Ingredients
  

  • 1 large head of cauliflower
  • 1/2 cup Buffalo sauce
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1/2 cup blue cheese crumbles optional
  • 1/4 cup sliced green onions
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into bite-sized florets.
  3. In a bowl, toss the florets with olive oil, garlic powder, salt, and pepper.
  4. Spread the cauliflower evenly on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until golden brown.
  6. Remove from the oven and toss with Buffalo sauce.
  7. Layer the coated cauliflower on a serving platter and sprinkle cheese on top.
  8. Return to the oven for an additional 5-7 minutes or until the cheese is bubbly.
  9. Top with blue cheese crumbles and sliced green onions before serving.
