Method
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and sauté chopped spinach until wilted, about 2-3 minutes.
- In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper until well combined.
- Stir in the sautéed spinach and both cheeses into the egg mixture until evenly distributed.
- Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes or until the top is golden and set.
- Allow to cool for a few minutes before slicing and serving warm.
Notes
To reheat leftovers, simply warm in the oven at 350°F until heated through. For added freshness, consider serving with a light salad or fruit on the side.
