Add the egg, vanilla extract, and red food coloring to the butter-sugar mixture. Mix until well combined.

Chill the dough for at least 30 minutes to allow the flavors to meld and the dough to firm up.
Scoop tablespoon-sized balls of dough and roll them in powdered sugar until well coated.
Place the coated dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes until the edges are set but the center remains soft.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
