Ingredients
  

  • 1 lb chicken breast
  • 2 cups corn fresh or frozen
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons mayonnaise
  • 1/4 cup cotija cheese
  • 1 tablespoon chopped cilantro
  • 8 small tortillas

Method
 

  1. Prepare the chicken by seasoning it with chili powder, smoked paprika, cumin, salt, and pepper.
  2. Cook the seasoned chicken in a skillet over medium heat for about 6-7 minutes on each side until fully cooked.
  3. Remove the chicken from the skillet and let it rest for a few minutes before dicing it into bite-sized pieces.
  4. In the same skillet, add corn and cook for about 5-6 minutes until slightly charred.
  5. Mix the cooked corn with mayonnaise, cotija cheese, and cilantro in a bowl.
  6. Warm the tortillas in a dry skillet for about 30 seconds on each side.
  7. Assemble the tacos by adding diced chicken followed by a generous scoop of the corn mixture.
  8. Finish with additional cotija cheese and cilantro if desired, then serve immediately.
