- In a saucepan, combine the heavy cream, coconut milk, sugar, and vanilla extract over medium heat.
- Once it begins to simmer, remove from heat and sprinkle the gelatin on top. Allow it to bloom for about 5 minutes.
- Stir until the gelatin fully dissolves, then pour the mixture into ramekins or serving glasses.
- Chill the panna cotta in the fridge for at least 2 hours, or until set.
- While waiting, prepare the mango puree by blending the fresh ripe mango until smooth and creamy.
- Once the panna cotta is set, spoon the mango puree generously on top of each serving.
- Optionally, sprinkle with toasted coconut flakes before serving.
Notes
For an extra touch, consider adding a drizzle of honey or agave syrup on top. This panna cotta can also be made a day in advance, allowing the flavors to deepen overnight.
