Ingredients
  

  • 1 cup heavy cream
  • 1/2 cup coconut milk
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon gelatin powder
  • 1 large ripe mango pureed
  • Optional: toasted coconut flakes

Method
 

  1. In a saucepan, combine the heavy cream, coconut milk, sugar, and vanilla extract over medium heat.
  2. Once it begins to simmer, remove from heat and sprinkle the gelatin on top. Allow it to bloom for about 5 minutes.
  3. Stir until the gelatin fully dissolves, then pour the mixture into ramekins or serving glasses.
  4. Chill the panna cotta in the fridge for at least 2 hours, or until set.
  5. While waiting, prepare the mango puree by blending the fresh ripe mango until smooth and creamy.
  6. Once the panna cotta is set, spoon the mango puree generously on top of each serving.
  7. Optionally, sprinkle with toasted coconut flakes before serving.

Notes

For an extra touch, consider adding a drizzle of honey or agave syrup on top. This panna cotta can also be made a day in advance, allowing the flavors to deepen overnight.
