  • 4 ripe peaches halved and pitted
  • 2 balls of burrata cheese about 8 ounces
  • 4 cups arugula or mixed greens
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and freshly cracked black pepper to taste

Method
 

  1. Preheat your grill over medium heat.
  2. Prepare the peaches by halving them and removing the pits.
  3. Brush the peach halves with olive oil and sprinkle them with salt and pepper.
  4. Place the peach halves cut side down on the grill and cook for 4–5 minutes, until grill marks appear.
  5. Flip the peaches carefully and grill for another 3–4 minutes. Start preparing the dressing during this time.
  6. In a small bowl, whisk together balsamic vinegar and honey until combined.
  7. Remove the peaches from the grill and let them cool briefly before assembling the salad.
  8. On a serving platter, arrange the arugula or mixed greens, then top with the grilled peach halves and burrata.
  9. Drizzle the honey balsamic dressing over the salad, and sprinkle with additional salt and pepper if desired.

Notes

For best results, serve the salad immediately after assembly. The dressing can be stored in the fridge, making it an easy addition to future salads.
