  • 2 medium-sized eggplants
  • 1 cup plain Greek yogurt
  • 3 garlic cloves minced
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice

  • Fresh parsley for garnish

Method
 

  1. Prepare the eggplant by slicing it into rounds.
  2. Sprinkle the slices with salt and let them rest.
  3. Rinse and pat the eggplant slices dry.

  5. Roast the eggplant slices in the oven.
