Spicy Buffalo Chicken Stuffed Peppers combine tender, roasted bell peppers with a zesty filling that delivers a satisfying crunch and savory flavor, making them an exciting choice for game day gatherings or weeknight dinners.

Ingredients
  

  • 4 large bell peppers
  • 2 cups cooked chicken shredded
  • 1/2 cup buffalo wing sauce
  • 1 cup cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by halving them and removing seeds.
  3. In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, cheddar cheese, green onions, garlic powder, and season with salt and pepper.
  4. Stuff each bell pepper half with the buffalo chicken mixture.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes.
  7. Let cool for a few minutes before serving.
