Ingredients
  

  • 1 cup quinoa
  • 2 cups mixed greens
  • 1 cup roasted sweet potatoes cubed
  • 1 cup chickpeas cooked
  • 1/2 avocado sliced
  • 1/4 cup red cabbage shredded
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Method
 

  1. Rinse and cook the quinoa according to package instructions.
  2. Preheat the oven and roast the sweet potatoes.
  3. Prepare the chickpeas and roast if desired.
  4. Assemble the bowl with cooked quinoa and mixed greens.
  5. Layer the roasted sweet potatoes, chickpeas, and other veggies.
  6. Drizzle tahini and lemon juice over the assembled ingredients.
  7. Season with salt and pepper to taste.
